Today you'll arrive in the gorgeous coastal city of Bari, with its grand boulevards and bustling harbour. You'll later travel to the extraordinary hillside town of Matera and check in at your hotel.
You'll discover the unique landscapes of Sassi di Matera, a district known for its ancient cave dwellings, which are suspected to be some of the first human settlements in Italy. You'll be staying in a cave hotel during your time in Matera, so you'll be truly immersed in this extraordinary area.
Today there's more time to explore the fascinating landscapes and archaeology of Stassi, with its caves, grottos, and natural ravines. You'll spend the morning exploring the district and visiting some of the Rupestrian Churches, built into the caves of the Murgia, a large limestone plateau.
In the afternoon, you'll enjoy your first culinary experience of the trip: a cookery masterclass at a nearby Masseria. Inside this traditional stone farmhouse, you'll learn how to prepare rustic Italian dishes before feasting on your culinary creations at a traditional Italian dinner with your fellow guests.
After breakfast, you'll head to Altamura, a hill town known for its traditional durum wheat bread, Pane di Altamura. While here, you'll pay a visit to a legendary local bakery to learn about the process of making this famous bread and taste some of their fresh creations.
Next, it's a short drive to the white-washed town of Martina Franca, past age-old farmhouses and sweeping valleys, where you'll take part in a wine tasting and tour a nearby vineyard.
This evening, you'll be checking in to your very own trullo in Alberobello for the night.
You'll have time in the morning to explore Alberobello. Perhaps wander its narrow streets dotted with trulli, stop in the little shops to buy local produce or souvenirs, and see the locals sitting outside traditional trattorie, dining al fresco.
Afterwards, you'll travel to Locorotondo, one of the Itria Valley's most beautiful whitewashed towns, where you'll stop for lunch (not included).
Later on, you'll enjoy a tour through ancient olive groves at an organic olive farm near Ostuni, where you'll also get to taste the delicious, extra-virgin olive oil produced here.
You'll then travel to Bari, where you'll have the evening free to explore the charming old town at your own pace, and tuck into some mouthwatering Apulian delicacies.
After breakfast at the hotel, you'll get to see more of Bari on a bike tour around the city. You'll see the elegant Old Town and spot pretty landmarks like the Basilica of St. Nicholas and Bari Cathedral.
